We love the chewy, nutty flavor of this grain and often eat the berries boiled served with fruit on top for lunch! It is one of our favorite grains and can the flour is great to bake with too.
This Heirloom variety of Wheat has a different genetic structure than modern wheat with a small whole-grain berry that is rich in protein, phosphorus, vitamin B6, potassium, antioxidants, and amino acids. It also contains a significant amount of the powerful antioxidant lutein, with higher antioxidant levels than durum and bread wheat.
Einkorn has a low gluten content because of its simple chromosome count of only 14 chromosomes as opposed to 28 in emmer or 42 in modern wheat. Many people with gluten sensitivities can easily digest einkorn with no allergic effects but it DOES contain some gluten so is NOT suitable for people with Celiac Disease.
